It's been a SUPER long time since I've last posted and sorry bout that. Finally iI have gotten used to the split shift work and World Gourmet Summit promotion has just ended at Domvs kitchen. Chef Claudio Sadler and his team of 2 chefs came down to help out and to promote his italian menu and his menu degustation for a period of 5 days. I've learned alot from this wonderful event and it's both stressful and fun at the same time. Here are some pictures

Another 3 weeks more of school and it's attachment period. Still miss the wonderful times with my fellow classmates at the outlet of charcoal,rosette and production. Come to think of it we have learn a lot of stuffs through this 1 year of theory and practical and we transformed from non-cooks to good cooks now. Once attachment starts mine weekdays and weekends are practically burned out and no more back to the usual way of chilling out with frens and families on sat.

Economic crisis is really so REAL to me now as compared to my secondary school days which i dun really care if there is one.Many of my classmates are having trouble getting a attachment slot be it a hotel or restaurant.Anyways tomorrow gonna head down to Sheraton Towers to sign the contract to have there as my choice for my work attachment for 1 year.This term full of projects,tests and exams to study for and my mind is gonna explode soon.

Long Long time since I've posted and it's been great since the return of more things to study,projects and attachment hunting.So far only 2 places replied me,Casa Verde at botanical gardens and Sheraton Towers Singapore.Hope that i can quickly get a good place in either one and start my 1 year working experience and get this over with.

School life is so boring and so much of theory lessons filling up my timetable schedule and it's been so many days since i get my reply from Mandarin Oriental whether can i do my attachment for 1 year there.Even though classes are boring but we still have fun and chirpy teachers and also jokers in class to make each of us laugh.Only have a chance to do pastry practical once a week and hope it changes to twice per week so we can learn more.

Time really flies when you ain't paying attention.Tomorrow's my last day at Mandarin Oriental and gonna miss those people I've worked with and managed to talk to some Shatec students there and it was great knowing them.Thai,barbecue,local,cold kitchen and pastry kitchen are places which I've been to.Today super tired after rushing to finish off the desserts of a wedding function of 530pax + prepare the cake for zoe tay's birthday celebration at Melt:The World Cafe.Chef Reuben a "ang moh" chef in the pastry kitchen well known for his macarone and chocolate making and seriously his pastry and dessert making I will rate 10/10.Yesterday the cuisine and wine:Asia reporters and photographers came and seeing how he create a dessert using the main ingredient:Raisin and his plating and decoration really left me speechless.That's all I've to blog and it's 3 days more to the boring old campus of Shatec.

Ushering in the new year with fireworks display at marina bay and totally amazed by the spectacular display of the fireworks in the night sky.After work at Mandrin Oriental went down to Marina Square meet up with eraidie,matthew,javis,grace,maggie,guo sheng,benjamin, and clement.We squeeze our way through the crowds trying to get a good view.While counting down to 12am and squeezing our way through end up being sprayed by this group of people with some party foam.The most hilarious take for yesterday was grace being dared by matthew 3 times to do stupid stuffs like going to a ice-cream seller and asking for pizza,shaking hand with a bangala and being slap in the face by matthew. Today was considered a memorable day and i shall leave with you guys this cute video.

Back from work eventhough it should be my 2weeks holiday.Currently working at Mandarin Oriental in the kitchen of Melts:The world cafe.For the whole of today it's only cutting and peeling of vegetables and I've got the recipe for a good tasting pineapple fried rice from a thai chef.Im like a super blur sotong today walking around the hotel and end up being lost and need to ask people for directions.If any of u guys ending up working there one day wish you guys good luck on your directions.In this two weeks get to learn from thai section,local section,BBQ section and of cos pastry kitchen.Hope i can learn something valuable from pastry kitchen before i go back to school to learn pastry.

Thanks to all who wished me during my birthday and had a great blast at Charcoal restaurant with both frens and family members. Tomorrow's my last day at Charcoal and then I'm headin back to school to learn pastry & baking ? 3 more months of theory lessons and then it's time for me to register for the hotel of my choice for my year-long attachment.

It's been a long long time since I've last blogged and guess it's time I start posting. Man O man yesterdays comprehensive exam was a killer as it left many of us worried about our marks after the guest judges tasted our food.Many of us were thinking of putting away $100 for our referral exam due to the judges remarks.Keeping my fingers crossed hope that I managed to make it through without taking up a referral exam. It's 5 more days to my big day and I've to work during the afternoon shift *damn! . 1 more week left in charcoal and it's back to school and back to my books and more crappy rules to comply to.

Had a great day during yesterday's dinner service cos got people to cover my griller section and I pluck tau geh wif julius and also chatted with him.Everytime during break time got always our jamming band to play random songs ranging from the very old to the newer ones.Train-ed home with Triyanto and talk alot of rubbish wif him.Been discussing wif javis cos he found his dining experience at Melt's quite nice so we decided to ask along anyone whose interested to come dine at Melt's wif us for dinner.Any takers? Today went down to parklane wif greg,maggie,meng guan and jason and played pool then followed on to LAN.Tons of fun wif greg especially cos he rly does stupid stuffs and especially during pool.Maggie finally learned how to play counter-strike and then train-ed home with maggie.Tomorrow same shift wif javis and zhuo sheng,haha can't wait cos we gonna turn charcoal upside down.

Finally the last outlet for my attachment term which is Charcoal and 2days there and yet I've to re-learn the ala carte menu there.Charcoal has much better business then Rosette cause maybe the food is nicer? Tough man to learn the new dishes and then I'm on my own to handle whatever station I'm given with.Today aboyeur for my AM shift and yet one of the customers gave comment on the soup which says:Soup-bad (KNS). I didn't know such civilised working adults still can use such language in comment cards.

Yesterday had a wonderful dinner buffet at Melt:The World Cafe at Mandarin Oriental.Chef Eric Teo came to my table and greeted me and told me he would be leaving for Germany to lead Singapore's culinary team to join the Culinary Olympics in Germany.How I wished 1 day I would be able to join the culinary olympic team and represent Singapore.Chef Eric continue to tell me that the road to being a great chef is long and it is hard so perseverance is all it takes to get there.Today had throat pain and it led to a fever due to the irresistible food offered on the BBQ grill and the buffet stations during yesterday's night.Tomorrow I'm off to Rosette to start off my outlet attachment term and I can't wait to see what is installed for me.Alright that's all I've to blog for today.

This whole week I'm in-charge of training restaurant meals.Yesterday food for lunch turn out like crap and dinner it was much better.Production is like a crazy place to work in and i cannot imagine continuing to work in production.So many things to do and be done before i call it an end to my production week.Next week i get to step into Rosette after 2 weeks of production life.

Today was my 1st day in production had to prepare staff meals,clean up the entire kitchen and prepare for tomorrow night's dinner at both training restaurants.Today is just the 1st day of production and I'm posted to production for 2weeks and there is a long way for me to go.Thought that production was fun yet there isn't time to have fun at all it was all work work work and more work to do! Tomorrow i will be leading my brigade consisting of Paul Chua,Paul amrit and Jerome to do deli meals together with me throughout the week. All those who are still in shatec for this week must come and support us by buying the deli meals located at the 4th floor.

All hopes pinned on Felipe Massa to steal the show for tonight and yet he stole the eyes of the audiences of those watching the F1 race as he race out of his pit station with the fuel hose still attached to his car and lost pole position and went to last position.My hopes all went to Raikkonen to earn some points for Ferrari and yet 4 laps remaining to the finishing line he crashed his car into the barricade.Anyways Ferrari went home empty handed earning a total of 0 points for this race.Congratulations to Alonso for winning Singapore's 1st ever night race.Tomorrow I would be heading to a whole new kitchen rather than Solo Kitchen 3(the place with many memories).Guess it's a whole new environment to work in and with new people to work with.All the best to all of DCS408A peeps working in both Rosette and Charcoal.Take Care my fellow readers =) .

Hope that Felipe Massa gets the championship for this F1 season rather then letting Lewis Hamilton clinch the title.Ytd night was so fun watchin drivers going into dead ends and crashing into the barricades and etc.Maybe one F1 season singapore may come out with their new brand of F1 car sponsored by SingTel and they get 1 china guy to race for them HAHA.Can't wait for tomorrow as it will be a big day for the drivers and for viewers on the track and those at home as the long awaited race has arrived.All the best to those working at Hotels during this F1 period,wish i would be able to =( .That's all i have to blog for today. At last back to Singapore after 4 days in Hong Kong.So many interesting things in Hong Kong to see and experience.Food in Hong Kong really make me beg for mercy as there is just too much of things to eat. Hong Kong is a Food lover's paradise and beat Singapore hands down so go there if u think your stomach can withstand large amount of food.Yesterday had dinner at a chinese restaurant with stephen,maggie,huiwen,javis,jason and jason's friend and her sister then walked around ladies street and temple street then followed by a unknown shopping centre.So much laughter at the dinner table with Jason aka.The Entertainer.Lucky I've escaped from being trapped in Hong Kong after the typhoon signal went to no.3 in the morning and I don't wanna stay behind as I'm dead broke after a 4 day shopping spree.Anyways let the pictures do the talking.

Today met up with javis,maggie,paul,zhuo sheng and jason then we head down to school for revision wif eugene.Revision turn into joking session after eugene left and then huiwen and grace came in and we started talking nonsense randomly.But overall today's paper turn out well eventhough the papers were swapped at the last minute but it's still ok.After the paper we all went to Koufu for more crapping session and then went down outside west mall to talk more nonsense.
Anyways I'm glad the last paper would be due on tomorrow and then no more exams for the next 3 months.It doesn't feel right my holiday trip is in 2 days time but deep down inside me I'm not even looking forward to it.
